Burmese Noodles (Khow Suey) - Vegan Recipe
This is one of the recipes by my mom which I totally love and I'm glad to share it here.
This is a Vegan version which uses coconut milk. You can substitute it for regular milk if you don't want it vegan.
Also, the main curry is totally oil-free. Oil is used only in the garnish.
Ingredients:
5 cups boiled noodles
For the tomato paste:
For the curry:
Method for the curry:
Mix the gram flour in the coconut milk evenly so that no lumps are formed. Keep aside.
Heat a pan and pour the tomato paste in it. Let it cook for 5-7 mins.
Pour the chopped mixed vegetables, and add the salt.
Pour 4-5 cups of water and let the vegetables cook.
Add the besan and coconut milk mix to it.
Keep stirring and let it cook for another 5 mins.
For the garnish:
Preparation of garnish:
In a small pan, warm the oil. Add chopped garlic.
After 2-3 minutes, remove it from the flame and add chilli powder.
In a deep frying pan, put some oil. Break the noodles in small pieces and fry them.
Serving:
In a serving bowl put some boiled noodles.
Top it with the curry.
Garnish with sliced onions, coriander, fried noodles, and chilli garlic oil.
Your delicious Burmese noodles (khow suey) is ready!

- 2 onions,
- 5 cloves garlic,
- 2 tbsp chopped ginger,
- 3 green chillies,
- 1/2 tspn turmeric powder,
- salt to taste

- 6 cups chopped mixed vegetables (carrot, cabbage, french beans, cauliflower, green peas)
- 400 ml coconut milk
- 1 1/2 tbsp besan (gram flour)
- salt to taste

- 6 tbsp oil
