T lounge by Dilmah

Tea is something many of us have as soon as we get up, or when we're tired, or just about any time of the day. A tea should also be paired with the right food, if you want to get the best taste. A good pairing is made when the tea's flavor and aroma matches or accentuates the flavors in the food. I was invited at T-Lounge by Dilmah for some tea tasting along with food pairing.

This place is really classy, and rightfully called "lounge"; it isn't your regular tea shop. The whole place has a very upmarket feel to it. They've got a wall studded with different teas, and a wide variety overall.

We had four teas with specific food suggested to be had along with each, to bring out the best flavor; and later also tried a very rare and special tea at the end.

Brilliant Breakfast Tea: This is one of the most common tea that's revered by people around the world. It was smooth on the palette and had a dark red color. It is also the one that they use to make the milky tea variants.
We paired this along with some Italian bruschettas. Fresh tomatoes and creamy Mozzarella with some balsamic vinegar over crunchy bread. I really liked the bruschetta too.

Moroccan Mint Green Tea: This was the one I loved the most of the lot. It wasn't as strong as the ones I've had at most other restaurants. It had a minty taste along with the Moroccan flavor. 
We paired this along with Lamb Kofta Burgers. The  burgers were really meaty and accentuated the flavors of the tea.

Single Estate Darjeeling Tea: This tea had a strong aroma as well as a taste that got even stronger towards the end; also, a tad bit bitter. We paired this along with Ravioli with Ricotta, Parmesan and fresh tomato sauce. The Ravioli was delicious.

Single Estate Oolong: Oolong is a tea between the green and the black. It is partially fermented. I had a great aroma to it and the taste was okay. We paired this along with the delicious Pistachio and Ricotta dessert, after having a bite of which, the tea tasted better.

Seasonal Flush: There was also a special tea that was awaiting us. It was called the seasonal flush 2017. It had a mild aroma of rose, lychee, and almond. Let me give a bit of a background as to why is it so called. Cultivating a tea plantation requires a specific kind of weather. Every day the weather keeps changing a little bit, and may not be the ideal weather. When there is perfect weather for 12 straight days (Yes, just twelve - a weather that specific doesn't occur that often), only then is it possible to get this tea. The term "flush" comes from the game of poker (all cards of same suit). This year there was only 10 kilograms of this tea produced. 
This tea was so special that they served it in a wine glass. 
I loved the aroma of this tea. It got a bit strong towards the end.

Different tea has different suggested brewing times, and I recently learnt this at the tasting session. They also have a timer for each of these teas.
